A wholefood soup to nurture your winter flu

Cold weather getting you down? I’m sure you need to recover ASAP & here is a recipe to help you heal!

Easy ways to add some extra nutrition & flu fighting ingredients to your meals when you aren’t feeling fabulous is through extra leafy greens, spicy broths & spices. Simple additions of turmeric or ginger can make all the difference through your recovering couple of days.  I find spices such as chilli flakes & paprika will add some nice flavour, whilst the 1 -2 teaspoons of grated ginger with an extra clove of garlic will help.

Meatball broth with leafy greens

  • 500g organic lean pork mince
  • 1/3 Cup breadcrumbs
  • 1 Teaspoon paprika
  • 1 Teaspoon chilli flakes
  • ½ Teaspoon cumin

  • 1  Litre organic chicken broth
  • 1  Whole onion
  • 2 Cloves of garlic
  • 1  Thumb sized piece of ginger grated
  • 1  Bunch bukchoy
  • 1  Bunch choysum

  1. To make the meatballs, add the mince, breadcrumbs, paprika, chilli flakes & cumin to a bowl
  2. Mix them together with your hand until fully combined [I find I don’t need an egg but if your mixture is too try, feel free to add 1 beaten egg]
  3. Roll the pork mixture into small balls & place on a baking tray in the refrigerator whilst you make your broth
  4. Add the onion, ginger & garlic to a pot with coconut oil & sauté until soft
  5. Add the chicken broth and bring to the boil
  6. Taste the broth, you may want to season with salt & pepper or even 1 Tablespoon of soy sauce adds flavour
  7. Add your meatballs to the broth to poach for 10-12 minutes until cooked
  8. Whilst your meatballs are cooking, place the leafy greens over the top of the meatballs & close the lid so the veges steam away [they don’t need to be immersed in the broth to cook]
  9. Once the meatballs are cooked, gently stir your veges into the broth & add another teaspoon of chilli flakes to add a small kick of spice
  10. Serve as is or add ½ a cup of pearl cous cous or spelt pasta
