A simple but delicious slow cooker go-to

Feel like an easy night off cooking? This go-to recipe will not only taste amazing, but will have your house smelling incredible! I make this dish so often and yet every time, it is so good & no one ever complains. I switch it up but changing between pork, beef or lamb and sometimes change up the veggies and mash to make it different. This is definitely a fabulous meal for dinner parties for 4-6 people or even as a meal prep recipe for your weekly lunches.

 

Slow cooked spiced tomato pork or lamb

 

Ingredients

 

  • 1 Boneless pork or lamb
  • 1 Can of organic tomatoes
  • 2 Cups beef stock
  • 1 Cup red wine [optional can be omitted]
  • 1 Teaspoon paprika
  • ½ Teaspoon chilli flakes
  • ½ Teaspoon cumin
  • Optional fresh thyme
  • 2 large sweet potatos
  • 2 Bunches of broccoli or broccolini

 

Method

 

1. Add the meat of choice into the slow cooker

2. Add red wine to a small saucepan and leave to simmer until it reduces by 1/3

3. Add tomatoes, stock and spices & let simmer for 2-3 minutes until combined

4. Add all contents into the slow cooker & add the leaves of the thyme

5. Leave on low for 8 hours or high for 3-4 until the meat is tender and can be pulled apart by a fork

6. Add brocciini into the slow cooker for the last 20 minutes or grill in the oven until tender

6. Boil & mash some sweet potato and top with your delicious creation

 

This meal is incredible for lunch meal prep as well as an easy go-to dinner option. Alternatively you can add carrots and celery into the slow cooker for extra veges!
