Is there anything better than crispy bread, roasted tomatoes & a balsamic glaze? This roasted balsamic tomato bruschetta is a great weekend lunch recipe or even a pre-dinner party snack for your guests. I love to make this recipe when I have unexpected family or friends stop by or my favourite pass time ... with a glass of wine in the afternoon with my husband. If you happen to have 10 minutes prep time & an oven - you're ready to go!

  • 3 - 4 Slices of sourdough 
  • 1       Punnet of cherry tomatoes
  • 3      Tablespoons balsamic vinegar [ to drizzle ]
  • 2      Tablespoons olive oil [ to drizzle]
  • 4      Tablespoons tomato paste
  • 3 - 4 Fresh basil leaves
  • 20g Goats cheese [ can omit for vegan cheese or feta ]
  • Salt + pepper to taste


  • Balsamic glaze [ un-sweetened ]



  1. Pre-heat the oven to 180 degrees & slice the cherry tomatoes into halves 
  2. Add the halved tomatoes into a baking dish drizzled with the balsamic vinegar & 2 Tablespoons of the olive oil and bake in the oven for 20-25 minutes [ until soft & caramalised ]
  3. Toast the sourdough, spread the tomato paste over each slice, top with the balsamic tomatoes, basil leaves and goats cheese
  4. Drizzle with olive oil & balsamic glaze & serve
