Ingredients

  • 1 Cup almond meal
  • 1 Cup desiccated coconut
  • 3 Tablespoons rice malt [substitute: raw honey; maple syrup]
  • Zest of 1 lemon
  • Juice of half a lemon

Method

  1. Add all ingredients into a mixing bowl and mix with your hands until a sticky dough is formed
  2. Roll into 10 - 12 balls
  3. Coat in desiccated coconut

Store in an air-tight container in the refrigerator or in the freezer to grab on the go!
