The best breakfast pancakes I've ever created! These beauties are my go to, any day I feel like I need a little extra TLC. They are fluffy, light, moist & cook just like 'normal' pancakes but packed with nutrition!

Ingredients

Dry Ingredients

  • 1 Cup buckwheat flour
  • 1 Teaspoon baking powder

Wet Ingredients

  • 1 Tablespoon rice malt syrup [substitute: honey; maple syrup]
  • 1 Lightly beaten egg [substitute: 1 serving of vegan egg replacer; 1/4 water + 1 Tablespoon flaxseed meal]
  • 1 Cup coconut or almond milk

Optional

  • ¼ cup white chocolate chips

Extra Fluffy Option

  • ¾ Cup buckwheat flour
  • ¼ Cup arrowroot flour or GF self raising flour

 

Method

  1. Preheat your non stick fry pan over a medium heat
  2. Whisk together the wet ingredients until combined
  3. Add the dry ingredients and continue whisking until a smooth batter is achieved
  4. You will notice with buckwheat flour, that there is a slight elastic texture when lifting your whisk from the batter – this is completely normal!
  5. Grease your non stick fry pan with coconut oil, and pour approximately ½ a cup worth of your batter until the pancake forms the size you wish
  6. Wait 1-2 minutes or until the underside of the pancake is golden brown and flip that bad boy over
  7. You will notice some bubbles popping / appearing on your uncooked batter side just like [normal] pancake batter, however not as many will appear... so do not use this as a cooked indicator
