5 minutes to make dessert?! YES. This is my favourite night time treat for those evenings when you're just craving something sweet but you don't want to ruin your goals or your wholefood week. Especially if it is a monday-slug day & you're just wanting a pick me up after dinner!

  • ¼  Cup chopped dates
  • ¼  Cup boiling water
  • ¼  Almond butter
  • ¼  Almond meal
  • 1    Tablespoon coconut oil
  • 1    Egg

Caramel Sauce

  • ¼   Cup maple syrup
  • 1/3 Cup full fat coconut milk



  1. Add the boiling water & dates together in a small bowl & set aside
  2. Add the almond butter, almond meal, coconut oil & egg into a small ramekin & mix to combine
  3. Add the date mixture into the ramekin & whisk until combined - set aside
  4. Add the caramel sauce ingredients into a small saucepan with the lid closed on high heat & let the sauce thicken & reduce 
  5. Meanwhile, microwave the pudding mixture for 1 1/2 - 2 minutes 
  6. Serve with the hot caramel sauce
